Pulsed electric field (PEF) technology can be applied in three separate stages of wine production. PEF treatment of maceration, lees, and wine contributes to the winemaking process and wine quality.

  • The crushed grapes are pumped through the PEF system and treated. The pulsed electric field opens the grape cell membrane, accelerating the extraction process.
  • Faster extraction results in: Reduction of maceration time from 10-12 days to 5-6 days.
  • Double the maceration capacity.
  • Improved quality: Greater color intensity and higher polyphenol content can make the wine more suitable for aging.

  • PEF treatment accelerates autolysis, releasing valuable compounds such as polysaccharides, amino acids, and mannoproteins from cell walls at a much faster rate.
  • The faster autolysis of the yeast results in a reduction in aging time on lees from 180 days to 30 days. This produces more complex wines with a better palate.

PEF can inactivate microorganisms during aging or before bottling and stabilize wine, reducing the amount of SO2 added to the wine to prevent spoilage.
